Make your own simple syrup

Many classic cocktails call for the addition of sugar, in one form or the other, to act as a sweetening agent to balance a sour or bitter taste elsewhere in the drink. Recall the simple recipe for the cocktail in the 19th century: spirit, bitters, sugar and water. As easy as it is to just toss a sugar cube or a pinch of loose sugar into a glass and call it a cocktail, this method of introducing a sweetener to your drink often doesn’t cut it. This is because sugar in its granular form needs time and the correct liquid environment to dissolve in the rest of the drink, two things the bartender and the drinker don’t often have and don’t want to create. Enter simple syrup.

With the introduction of simple syrup to your cocktail-making toolbox, you’ll be able to introduce that necessary sweetening agent to your concoctions with ease and, even more importantly, with quality. When you use liquid sugar in your mixtures, the other liquid ingredients can more easily envelop the sugar into the essence of the cocktail, without having to go through the effort of dissolving granular sugar. This makes for a more even mixture and a more consistent cocktail (no pesky grains of sugar at the bottom of the glass anymore!). Alright, enough about the reasons for making your own simple syrup, let’s actually do it! You’ll need:

2 cups of granulated white sugar
2 cups of water
1 glass bottle
(in which you’ll store the simple syrup once done)
(feel free to adjust these measurements for more or less simple syrup quantity)

Bring the cup of water to a boil in a stove-top pot. Once the water’s boiling, pour the sugar into the water. Stir the mixture until the sugar is well dissolved and the liquid returns to a boil. Let boil for a few minutes and then remove the pot from the stove. Let the mixture cool. Once the temperature of the syrup is safe to handle, funnel the contents of the pot into your glass bottle. Store the bottle in the refrigerator.

And there you have it! You’ll use your simple syrup in countless cocktail creations and make higher quality drinks in less time because of it.
